Straining Cold Brew on Shabbat

Can one strain cold brew coffee on Shabbat for consumption on Shabbat?

    If I understand the process properly, it would seem to me to be forbidden. Even those who theoretically permit partial filtering (i.e. not pushing the handle all the way down), advise people not to do it because of the possibility of the handle being pushed too far down, which would be a prohibition of Borer (forbidden separating).
