why did hashem make all the kosher animals have fins, scales, split hooves and chew cud? why couldnt he make like the ones with tails are kosher ir the ones with pointy ears? why did he choose the characteristics that he choose?

Dear Rabbi, I recently saw an Orthodox mohel do a bris on a boy where the mother was a Reform convert. I was surprised because I thought that Orthodox rabbis didn't accept Reform conversions, and therefore the baby wouldn't be considered Jewish. What am I missing? I've found out since that this actually isn't that unusual. Is the Orthodox opinion of these conversions changing or is there something about a bris that makes it possible to be lenient? I'm confused--help!
