I’ve learned through certain resources that “pulse”, as mentioned in the book of Daniel, was likely a mixture of beans, peas, and lentils. Is this true? If so, what specific kinds of these ‘vegetables’ would they have been in Daniel’s time and place?

  1. I think that you are probably quite accurate. Pulses in the time of Daniel would have consisted of beans, peas and lentils plus some other seeds. According to some traditions Daniel may have also eaten poppy seeds. The point is that these legumes are all very satisfying and filling and one can eat them and still retain a healthy appearence even if one does not include meat in one’s diet.
